I'm not the best person to be answering this, as my frothing skills are a source of amusement to capable baristas, but... Slow down the steam flow, don't open the valve as far as you're opening it, if you are getting too much heat too fast. With the lessened flow, you can get the milk to fold through itself with the frothing tip closer to and/or right at the tip. Don't submerge the tip until the frothing jug has noticibly gained volume (Of trapped air) and then increase your angle and submerge a little distribute the foam throughout. This is one technique. I know many will point out whatever flaws I have included or omissions I have neglected. As stated, I'm not great at the frothing. The obvious point there is that if it's heating too fast, you're putting too much heat too deep in the jug. Frothing gurus, please refine the advice.
