Me again, doing maintenance on the office Mirage Veloce, after I was paging through the user manual after making an espresso I noticed it had an area on 'maintaining the descaler... please do this at least every 3 months or else dire warnings'. Well its certainly been longer than 3 months. It gives instructions on _how_ to clean it but not where it is, I don't even know what I'm looking for.

The instructions are regarding 'regenerating your descaler', and proceeds to discuss some device with hoses and levers which I need to run a detergent through and then run water through for 30-45 minutes until the water doesn't taste salty. I think I'm looking for a device of some sort, not a descaling agent like the ones you linked.

In that case, they mean the water softener. The type that gets regenerated or recharged looks like this. You may also have the type that uses cartridges that you simply replace. Do you see anything between the water valve and the machine?
