Because last week was the only time we'd gotten good shots out of it. My wife says she increased the dose from 7 g to 8.5-9 g per shot, and increased her tamping pressure. That worked for a week (which was about four uses). Now, without having changed anything, it comes out in drips instead of a stream, and is bitter. We even cleaned it.
This is why I am ready to give up on this machine. But not ready to give up on espresso.
You don't need to tamp with a ppf. They are designed to give you something with even canned drip coffee. It won't be any good but you will get something.[x
Really? When we weren't tamping, the shots came out very diluted.

You probably pulled it too long. I was always under the impression that the pressurized baskets you pull to volume, instead of the 20-30 that you would get with a non pressurized. You can use a drip grind most of the time with a tamp using the weight of the tamper (just to even it out).

I am beginning to think it is our beans.
We purchased a 12 oz bag of a local roaster (Caffe Vita), but there was not a roast date like I thought. We purchased those on December 20th. So they must be bad now.
Also, I think the flavour is now sour. We experimented this morning and we are sure we now have the grind and tamping down. My wife found out she has been tamping harder than 35 pounds. Yet it came out watery still. Hmm?
