Well, I'm thinking of selling our Vetrano rotary for an upgrade.
- dual boiler - plumbed - PID, I'd really like to stop surfing - Rotary pump, we need to keep things quiet - 2 group would be nice but we have limited pace so I assume 1 group it is - oh yeah, joysticks if possible
Wow, that's already a fully decked out machine. (At least from my perspective) What is the price range you are looking for?
Do you want automatic or semi-automatic? The joysticks request kind of limits your choices a bit...
The Nuova Simonelli Musica has a kind of a joystick on it... They go for about $2.6k where I live, so I'd consider that a step up from what you have.
There are a whole bunch of machines which meet your requirements between the $2k to $4k mark, except for the whole joysticks thing. I really like the looks of the La Spaziale machines, but they don't have joysticks.
I think you could also probably order a machine with knobs and get it retrofitted with a joystick kit. For example, on Chris's coffees website, it appears that they sell a Joystick kit for the Alex Duetto II and I believe it would meet all of your requirements. http://www.chriscoffee.com/products/home/espresso/izzoduetto It looks like they'll even retrofit the machine for you!
I really like the looks of this machine. One gotcha is that they put the PID interface on a separate cable which you plug into the machine.
If you very adjust the brewing temperature very seldom, this isn't such a bad idea, only because you don't have a PID which spoils the look of the machine. The only downside I think is that this machine is relatively new to the market, so its not really tried and tested yet. However, there is a 15 page (And counting) thread about the R58 in the forums so it must be something good!
They're $2.7k here, so it would be a big step up from your Vetrano.
I personally don't see the value in spending that much on a machine myself. You would be getting quality though, but when you consider that there are machines on the market selling for half as much which do pretty much the same thing and have the same amount of features, I don't see the value in it.
An absolutely beautiful piece of art. Even if Kees Van der Westen came to me personally and said, "Bud, I want you to have one of these machines, free. No catches. Take it. Love it. Enjoy it." I would tell him, "Sorry Dude, No thanks." ... Why? Plenty of reasons.
Don't get me wrong, it is a beautiful machine, but in my house, it wouldn't get the the attention it deserves. This is the kind of machine that you design an entire room around. It belongs in a special coffee bar where regular parties are held with friends. Or in a small cafe which serves sweets and pastries. Not in my kitchen next to the toaster and Breville K-Cup machine.
It would be like giving a Bugatti Veyron to a Pizza Delivery Boy... which in some ways would be kind of humorous....
Not to mention, from my point of view, we live in a smallish house and counter space is at a premium. It's a counter space hog. :) (It also won't fit next to the sink, I'm limited to machines which are no wider than 16 inches if I want to plumb in.)
I know I'm a little off topic and for that I apologize...

Don't get me wrong, I only suggested the first high class prosumer or commercial machines that came to my mind given unlimited money. That's why I asked for a budget. It's hard to make a good recommendation without knowing finances.
