So I got my toys......been playing with it and seem to like it much better already. I do have some questions. Please let me know if I should start a new post. Reading FAQ's are not the same as getting real advice from the experts.
My grind is clumpy. Is that ok?
There is often water in the puck when the shot is pulled. Is that normal?
How do I dial in the drip time. Do I time it based on the amount of coffee? (2oz for double)? If I get more than 2 oz in 30 seconds, is the grind too coarse?

1) Some small clumps are fine, especially if they break apart easily. You don't want hard big clumps. Try the Weiss Distributing Technique to break up the clumps.
2) Your pucks won't always be perfect and dry. Unless you eat the pucks I'd worry more about what your shot tastes like.
3) Ideally you get 2oz in 25 seconds. That doesn't always happen and it doesn't mean that if it's not 25 seconds that it won't taste good. If my shot (2oz) is anywhere from 22-30 seconds then I'm usually happy. A double is usually 1.5 - 2oz. I would stick to a number just so you become consistent, so stick with 2oz if that's what you've been doing. Telling me that you get "more than 2oz in 30 seconds" doesn't exactly help because you should have shut off the shot at 2oz exactly, not "more than 2oz" which could be any value. So I would be a little more exact in technique. Pull exactly 2oz, if it's more than 25 seconds then it's too course and if it's less then it's too fine. Adjust accordingly. That's just a basic principle you can experiment as much as you want to your liking. Again, you don't always need to be exactly at 25 seconds to have a good tasting shot.

Great thanks! I adjusted to 28 seconds with 2 second pre-infusion, 3 second wait and 23 seconds dripping. Exactly 2 oz. Tastes great. Much better than the stupid Jura that I'm returning. Now that its all dialed in, there really isn't too much work. Just takes some time to heat up the boiler.
