I have a Rancillo Silvia V3 w/ a PID. I just checked the brew temp by dropping a naked shot into a prewarmed styrofoam cup with a digital thermometer stuck in it. The PID is set for a boiler temp of 216 which is supposed to provide a shot temp of 205. This test (three times) gave me a temp that ramped up from 175 to 195 degrees in the cup. Should I raise the temp to the so called preferred temp of 205?

I have a Gaggia Classic. I find that I can get fairly reproducible temperatures in a styrofoam cup if I allow about 15 to 20 minutes warming of the machine. I warm it with the PF on it as that is a large mass. That may not be important for the test, but is for brewing. Flushing, hitting the steam switch for a couple seconds and other tricks can help stabilize the temperatures. There are many threads on surfing temperature and flushing water through the machine. SBDU machines with relatively small boilers can drop temperature with cold water flowing in. The PID temperature may appear stable in 5 minutes, but the whole mass is not stable. I would not worry about where to set the PID until you can get reproducible temps. Then there is the problem with measuring in a styrofoam cup. The top temperature does not last and is difficult to read even with digital thermometers. There are threads on over the lip thermocouples.
