Sorry, forgot to mention an exceptionally important step.
Before inserting the panarello, crack the valve for a second or two to eliminate condensation.
Don't know if it's the same on other machines or not, but the EC155 will put a surprisingly large volume of hot water into the milk right at the beginning of the process if you don't release that condensation first. Totally destroys your efforts.
