Thanks Phil! This would make my BDB the ULTIMATE espresso machine! I'm still debating the open source espresso machine that was kickstarter funded.  My wife would appreciate it if I could take hat one off the list:)

Yeah. Come to think of it, they used to have a coffee cam at Cambridge University in England. It was a web cam pointed at a Chemex pot that people could consult before deciding whether to make the trek to the coffee room, presumably to gauge the time it would take for a caffeine fix. One of the big time Internet pioneers said it was the best application of networking technology he'd ever seen.

I just ordered 5LBs of Redbird so I have some sort of benchmark..
I can not get a sweet shot to save my life.
I am trying to be as scientific about the whole dose/grind thing as I can.
Starting with 18g then going finer finer.. Can't get over three bar. Went to 19g and pull 9 Bar...
Tried my fav Kona roasted to c+, some MX a c++ and finally a NIC at c.
I don't know if I am over roasting or if my beans are not suitable for espresso.
Taste wise, everything tastes dark, bitter and burnt (to varying degrees of course).

When this espresso machine arrived at my house I had high hopes as it's pretty pricey for a home unit.

I have to say that it exceeded my hopes.

Easy to use and it produces the best espresso.

Will it last and be trouble free? I can't say yet as I've only had it a week however it sure seems like a top quality product.

I'm settling in on good Americanos..
I have the Vario set one below full fine on macro and the micro about half way.
19.5 grams fills the 18g single wall 18g portafilter right to the top with gentle tapping.
Getting a good firm and even tamp.
First drips fall 10-11 seconds and finish 30-35 seconds.
7-9.5 BAR.

I'm trying to fill my shot glass to near the top (half crema)..
Are ther two blonding stages or one?

I suppose that depends on the size of your glass... I would go by volume.  Since you have a scale, weight would be the ideal measurement.  Here are some good starting points.

Redbird is here.
With my naked I ground 18.5 fine enough to choke, still getting channeling.. No spritzers.
Two micros at a time I can get a decent volume right at 40 seconds (after two adjustments). Still channeling.
I am dosing using my finger to level and not tapping.
One even tamp with about 20-25 LBs, no twisting.
Taste wise It's still a little on the dark side without any complexity.
I feel it will taste better without the channeling!
