With all of the discussion about offsets, I'd like to centralize the data on this topic. Can those who own the GS/3 and have done Scace-type measurments at the group please post their resulting offsets? It seems the machines are coming with different offset settings which aren't necessarily accurate. I am wondering if we'll see a reliable trend. I would think that the machines should be pretty similar.
Suggestion: don't worry about the offset. Just experiment with brew temp until you find the right setting for your blend, and don't worry what the displayed temp is. It'll be close enough to not look insane. The absolute reading is pretty irrelevant. What's important is how reprodiceable and stable the brew temp is and this is something the GS/3 excels at.

"Let's sychronize our watches." While I agree that knowing the actual output temp is not critical info for getting the most out of our espresso, I still think it's good info to have. TYeah, to some extent, it is knowledge for knowledge's sake. But offset also tells us a little about our machine. It allows us to relate to other GS/3 owners when discussing brew temp. Finally, the true geeks among us, simply need to know such things.
My machine came set with a POSITIVE offset of 5.2f. Franke recommended a POSITIVE 1.7f. With a scace, the desired temperature at the group had me change my offset to a NEGATIVE 3.4f. Before the Scace, a negative number made more sense to me. The Scace confirmed it.
I need to amend this. My technique in using the Scace was incorrect in arriving at -4.3. To get the 4.3, I started the "shot" and ran it until the machine readout and the Scace 2 settled down. At that point, I subracted the Scace 2 readout from the GS/3 readout.
The above technique is incorrect. As has been pointed out in other threads (e.g., the new GS/3 owners thread), the temp the GS/3 displays will rise when pulling a shot, but this is not a reflection of the temp of the water coming out of the group.
Today I plotted a 25 second pull with the Scace 2.
For the above, the coffee boiler temp was set to 202.5. If one assumes the original factory offset was correct, one would subtract 199.1 (202.5 - 3.4) from the above numbers to get the difference between the actual temp and the target of 199.1.
To state this another way, the boiler temp is 202.5. The offset is -3.4. So one is really asking for a water temp of 202.5 - 3.4 (199.1). So, if you subtract 199.1 from the above numbers, you will get the delta from the target temp. The deltas are:
As you can see, at second 5, the water temp is 1/2 degree below target and finishes at 25 seconds 1/2 degree above target. As such, I think La Marzocco had the offset correct at -3.4. I've changed the offset back to -3.4.
