Auber Insturments installed it. I just contacted them and they're going to walk me through some trouble shooting and a possible re-install. Quite responsive. I suspect a possible short, as the temp reading jumps sometimes happen when jiggling the machine with taking the basket in and out. Thanks again to all for their help. I'll keep you posted.

I have a Silvia with an Auber PID and I experienced something similar to you shortly after installing the kit. First, I doubt your temperature sensor is epoxied to the boiler. The Auber kit that I have (and that you probably have too) does not have a typical metal washer-style thermocouple, it is embedded into a small screw that is then screwed into the top of the boiler. Where the thermocouple wire enters the top of this screw, there is a small amount of epoxy. Theoretically, the screw type sensor should be accurate than the typical metal washer style temp sensor because it gets deeper into the boiler wall instead of sitting on top of it.
Right after I installed the kit on my machine, I was getting readings all over the place. It turns out that the the temp sensor screw was not screwed in all the way (the wiring inside the screw is apparently delicate, so I didnt want to man-handle it too hard during the install). I took the screw out and screwed it back in, making sure it was in tight this time (use pliers to get it in tight if you can't do it by hand). The machine has worked flawlessly since.

Problem solved. Thanks to all for their help. Yes, the machine did have a screw sensor with the small amount of epoxy on top. But no problems there. When I took apart the control unit, I found one of the terminals to be loose. I'm surprised this doesn't happen more often given the vibrations in the machine. In any case, tightened, re-installed, and it's back to normal. Siyu Liu at Auber Instruments was very responsive and helpful by phone and email.
