hmmm ... i don't think it's any of those, but i'll take a closer look next time.
1) the loud noise at the end occurs whether i'm trying the plunge-as-deep-as-possible technique, or the keep-it-swirling technique.
2) the milk may be getting too hot ... if over 125F is too hot. the therm is accurate, i calibrated to boiling water. the lag from what i've seen is about 5F, so i guess the sound probably starts at about 130F. my impression was that 140F was the target though ... wrong? i know doing it by hand is the idea, but at least in the beginning it helps to have some reference.
3) i just switched to a 12 oz pitcher (was using 20 oz) ... either way i fill halfway, and i get the same sort of noise
i'll try it some more and see what i get. thanks for the answers!
