ev,
I've edited my previous post as the pstat is actually cycling (most of the time) between 1.1 & 1.3 bar, not 1.2 & 1.4 bar. Sorry folks. :-P
Whatever they have done to the machine, it now pulls blank shots at a rock steady 95C and that's without flushing! I had the most sublime shots this morning with 3 day old Coffee Supreme "Supreme" blend.
I've just started a new job, so I'm too busy to get in touch with the tech who repaired my Office Leva. When I do call him, I'll let you know what he did.

I spoke to the technician today. Although he was unable to divulge some proprietary information, this is (more or less) what he told me:
The Expobar thermosyphon system is different from those in other manufacturers' machines. In the Expobar, hot water from the heat exchange is mixed with cold water fed along the return line of the thermosyphon system. Restrictors are installed in one/both line/s to limit/control flow and thus determine brew temperature. A brew temperature of your choice can be obtained using the appropriate restrictor/s.
He also said that any Expobar owner who is not happy with their shot temperatures and/or the amount of water used in cooling flushes should discuss the above "Procedure" with their vendor/service agent, wherever they are in the world.
Whatever he has done, or however it works, the result for me is consistent 95C shots.
