One of my clients has an Aurelia II. It's the only commercial machine I found so far that benefits from conical group gaskets. If you enjoy tinkering with your machine that's great but to be blunt if you're still struggling to make a perfect shot on a stock espresso machine you're going to reach your intended destination much faster by training with a pro barista before you tinker with your machine. I'm not saying don't tinker; I do it all the time in my shop. But you need that solid foundation to guide your efforts and working with the right barista to get a good shot on any machine is a lot of fun and the best bang for your buck. All the best

At this point it's not about trying to correct bad shots. The coffee I produce is good, or so says my wife (I don't drink coffee which I'm sure is slowing my progress).
I haven't got the shots to the point where my wife and mom can drink the espresso straight without making a face - but I'm pretty sure the last time my wife tried a shot of espresso in the best shop in town she made the same face so I think they're just latte drinkers.
I'm just trying to see if it can get any better. :)
I've tried looking for a barista class in town but the closest I've found is a 'home espresso' class where they play with Silvias.
Closest pro barista class I've found is in Vancouver (1000km/600miles) away.
I've managed to set up a coffeegeek meet in my city and attracted the attention of the 2013 Canadian Barista Champ who will be attending and giving some training so hopefully that angle is being worked as well.
Thank you again for the tips. Tough love I know. :D
