Ha! It's been 20 years since my electrical engineering degree. Looking at the PID instructions is making my head spin. I have not started the wiring - still trying to make sense of which wires go where!

Len, it's pretty simple, you're just bypassing the brew thermostat with the pid controller and SSR. The SSR is basically a switch.
First get your hook up wire (16 gauge, start with 1 to 2 ft. pieces, can shorten later) and spade connectors and wire cutters. Then hookup the pid inputs to the power switch on the Saeco, so that when the switch is on, the pid is on. There should be no reason for the pid to be on when the machine is off, right?
Then when you have those connected, start hooking up the SSR and Thermocouple to the PID, but start off with hooking up the PID to the Saeco power switch, so when the switch on the Saeco goes on, the pid powers on.
Let me know if you need help with this first step.

We seem to have very similar setups. Did you manage to find the perfect settings for the controller? At M50=340, P=140, t=33s and Ctl=0 it takes some time to settle back down after pulling a shot, ages after steaming. If I lower my M50 to improve recovery, it overshoots and never really settles at all. The autotune overshot a lot when I tried it; I stopped it when it was at nearly 140C and whistling like a steam train!
