Sure, it is pretty straightforward. You will want to get several feet (maybe 10 - 20ft or so) of 16 gauge hook up wire at a home depot, lowes, auto store, walmart, etc., as well as some spade connectors (assortment of male/female would be good), then just a screwdriver and wire stripper are needed. You'll probably want to find some type of sheath for the cables, as well as enclosure kit or project box for the pid as well.

For several of the low voltage connections, 18-22ga. wire would work, but 16ga is good to be safe.

Cool, I just got mine in the mail. 1) pid 1) thermocouples 1) SSR I am going ahead to Home depot to pick up those item you suggested.

Hi, I did a similar mod on my Saeco using an Omron PID. The kit cost around 60$ on ebay (pid, ssr, probe). I used the power from the machine and fixed the ssr in the casing. This way, there is no visible wires, only a 2'' cable behind the PID. I also tried a k type TC, but I prefer platinium thermistor (PT100). It's more stable and accurate in this temperature range. The result is very impressive, the temperature is stable ±0.2°C. It's more accurate than any coffegeek would ever require. Have fun Pierre (Click for larger image)

I found a magnetic enclosure for my PID unit - photos are in the previous gallery I mentioned.

Len, I'm using the wiring diagram in the Sestos instructions.

Did you make up your hook up wires? You are going to need 2 wires to power the unit, 2 wires to the SSR, the thermocouple can be directly connected to the pid, the SSR will need to have two output wires to connect to the heater elements.

Where are you with your wiring so far?
