Subject: white fog
 

Hi all:
 Does anyone know why the white fog show up at the second stage (leaf forming stage) ?  when I shake the pitcher, in normal case ,  contrasty white leaves show up at second stage, but somehow a large area of white fog show up at the surface of espresso, Does anyone know what happened??

I think I know what you are talking about and I always thought that was foam hitting the bottom and coming back up again in the pour.  But I could be wrong or not sure what you mean by fog.

Make sure you are pouring into the deepest part of the cup. Maybe try to slow down your pour a little.
