I made simple timer with 555 chip and dip switches.
Resolution is 0.1 sec with maximum setting of 16.5 sec (8+4+2+1+0.8+0.4+0.2+0.1sec).
Capacitor C4 is very important to ensure that SSR is not triggered at power on.
Triggering is by pushing SW1 with portafilter.

Very cool! I'm surprised you put the timer settings underneath the machine though. I get that it's a clean look of course, but does it deter you from tweaking? Did you leave a manual override in?

The circuit is connected after original power switch so it's not energised after I finish grinding.
There is no override.
After initial adjustment I didn't have to change the time. I get around 18 grams in 12.5 sec.
Maybe because I'm using one type of blend from the same roaster.
It will be better to have access to dip switches without tilting the grinder but I didn't have any nice box/enclosure for them.

The time needs to be easily changeable, not by a lot most of the time but as you grind finer, it will take longer to get the same volume of grinds and the converse is true too.
