I've raised the Vario to 1 on the Macro instead of 2. Micro is at P/Q. Instead of hitting the portafilter on the counter after grinding into the basket & possibly causing some coffee to come away from the edge of the basket & cause channeling--I'm using the heel of my palm & smoothing/leveling the coffee in the basket. Then tamping & twisting. For about 3 days now, I've gotten nicer, slower pours. So far so good. I weighed with a scale a roaster borrowed me. What I've been using is 15g & 17g. The only time I got sour shots were when I had gushers. When I have the slow pour, my shots are better than the most of the coffee cafes are. The roaster had the best shots in the world. He made me a couple cappuccinos. He has an over $1,000 grinder. I want to say Compak, not sure though & a double boiler espresso machine(don't remember what kind--but thousands of dollars). I could never justify that $$$$ for my own eqpt. with my 4 shots a day( 1 cappuccino). When the espresso is done pouring, my puck is firm & damp, definitely not soggy or puddly.
