For the second Polder, and surfing, this post. You take the thermometer apart. You may need to heat the steel probe to soften the plastic where it holds the probe. You can find a place to put the wire through the front or top and get the thermistor the boiler. Sometimes you can wedge it in a spot by an existing fastener, or try high temperature foil tape or glue.
You may want to start another thread. The title of this one will not help future searches as it is not more about the Gaggia Classic. OTOH you have the info for OPV and temperature and just need the V1 Silvia steam wand :) Until the PID.....

Thanks a lot D4F and Brainl. Can't wait to do this stuff and excited to see the results after I get a little bit more insight to what's going on with with T and P. Gotta get through this week and tuesday of next before I can sink some time into playing with these and gathering the materials I need. At that point I'll also be starting on a small roasting/cooling setup (...because why not?) so I can enjoy the process and not burn through $18 / 12oz beans as I experiment.

Regarding the Preciso again, I'm weighing beans right before I grind. A +/- 0.01g scale should arrive today so I can be pretty accurate. I'm not adjusting the burs at all without the machine on (and usually with some beans in it) but after I grind a pre-measured dose I obviously want to grind all the beans I put in the hopper. Is it bad for the grinder if there is a second (really just 1 or 2 pulses) of movement after the last bean has been sent to the Undertaker? I'm not continuously grinding with nothing in the hopper but there is definitely a discrete moment when its empty.

No not at all, it's fine. I single dose, and purge (keep on or press the button a few times after grinding) to get the left over grounds out. Usually just tip it forward a bit and give it a little wack while purging = basically 0 grounds retention.
