I've been using a Mazzer Mini for years and sold it last fall and bought an HG-One - took a chance based solely on gut and instinct.
I have understood that in order to get the best out of a coffee bean, spend the time and money on (in priority):
Grinder
Coffee bean
Espresso machine.
It wasn't until I began to use the HG-One, that finally I understood what others had been saying about the coffee having 'chocolate' this or 'berry't that. Up to that time I took all of those observations with a grain of salt - just some pompous fools playing tricks on me.
One morning however, I was grinding some beans and for some reason or other, perhaps because I was not concentrating hard on the many variables one has to attend to as they were well controlled, I noticed the aromas wafting up from the grind.
Ok, wow.
I smelled 'chocolate' and yes, some 'fruit' or other - certainly was berry like. I was able to finally smell this because the bean, the grinder, and all variables were in sync - and of course, I was in receptive mode.
The brew was exquisite tasting and in many flavours that my nose prepared me for.
The Mazzer never offered this sensual dimension, ever.
The HG-One did.
Paired with the La Pavoni Stradivari, and if the gods and constellations are aligned - be prepared to talk in the same poetic terms those others fools have been doing for years.
