Can you help me work out why I continuously have to adjust my grinder?
Every couple of days, I have to adjust a bit finer, then another couple of days later: finer again.
Could it be because the adjustment head on my Compak K3 keeps unscreawing itself in tiny microscopic steps whenever I turn the grinder on, or mostly because the characteristic of the beans change from the first day in the hopper? I usually keep my beans for a week or two, tops.
What do you think? Could it be caused by something else?
This is the most predominant reason. What you observe, to go finer as the coffee beans age, is the typical behavior regardless of the grinder. I suggest you to not have your hopper full with more beans than your daily consumption or even better try to single dose.

It's perfectly normal that you have to adjust coarseness setting on a daily basis, sometimes even within a single day, because humidity changes and the coffee beans age. The older the beans get, the finer you'll have to grind for optimal extraction.
