This is my speculation what could be happening and it may be wrong. I believe that 11-K does not equal 12-A, in fact I think 12-A is actually finer than 11-k. So when you are grinding for 8 seconds you are actually getting less coffee than at 11-k, a gram or two may not be that noticable to your eye but it is when trying to make a shot.
In the mean time just grind a little more or less, depending on what setting you choose. 11-K = less 12-A = more.
I will try to pick up a scale today. I've been meaning to get one anyways. I am thinking like a mail scale? Digital, not too expensive. Do I need anything more than 20g capacity with a tare button?

Wow . . .that is an insane price differential! Surely, there must have been better deals. I just went with that one because of the 10-yr warranty and it is compact. Didn't even need the calibration weight; put a nickel on the scale and it was exactly .5g.

"free" two-day shipping (should have it today) plus I've already spent more than that on wasted coffee beans and it's a no-brainer. Still a pet peeve of mine that I am not allowed to buy something from Amazon.com due to the fact that Amazon.ca exists... they are NOT the same as far as I'm concerned... far from it.
