I use a Rocket Giotto (love it) and have used a Rocky Doserless Grinder. I used to have a Silvia, so the pair was nice, but upgraded the machine next.
The only reason I wanted to upgrade from the rocky, was a finer grind control. So I bought a used super jolly on c-list for $325, got the $177 in parts from Espresso Parts and made it doserless.
Now I have these problems, do you have any solutions? Or should I just get a Mazzer Mini E or something....
1) Static. Wasn't a problem until about week 2. I know they have the static plates, but do these even work? The grinds fuzz around the chute.
2) Speed. The Mazzer Super Jolly is fast! By the time the porofilter is full coffee has dumped everywhere, it seems too fast for doserless....
3) Positioning, the chute wasn't made for this grinder. So the placement of the chute is close to the body of the grinder, and makes its hard to get the coffee in just right?
4) Coffee tastes great, guessing the better dial I have on this thing......
Anyway, just wanted some thoughts of what you would do. It looks great, but I would rather be using the rocky at this point.

I would advise you to use a digital timer to get the grind volume correct with the setup you have. There is no way you can guess the correct volume and that is what you are doing by grinding the way you are. You are getting so much better espresso from the grinder that is now current that I think you should put the effort into getting things dialed in.
your price is in the ballpark for what you have. I listed a super jolly for sale and the person looking to buy my used super jolly wanted converted to doserlessbut then backed out of the deal. I have more in parts than you do plus the labor so you did well with the price I was asking $550 with new burrs.
I was never a fan of doserless grinders, especially when it comes to commercial units that were designed for dosers. A doserless grinder will always cause a much bigger mess than a grinder with a doser.
As for the static I think if you just tap on the side of the funnel after you have finished grinding with something like a wooden dowel that will jar any loose grounds into your portafilter.
The quality of your espresso is so much better with your now current grinder then have ever was with Rocky.

I would put the doser back on, and add a little "shnozzola" chute per Andy Schecter. After using doserless for a couple of years (Rocky, Mazzer Mini E), I switched to a SJ with doser and have never looked back. I grind one weighed dose at a time and let the doser handle declumping and de-static'ing for me.
You could probably resell the doserless conversion kit if you take this approach.

I would not add any water to the beans before grinding or after for that matter that is only a recipe for disaster. either single does a weighed amount of beans or use a timer.

You know those people that want to tell you how to raise your kids but have none of their own? That is how i feel when someone with a kitchen appliance tells me how the merits or dis-merits of my machine or how to use it.
go ahead and do it if you wish it's your grinder. I am NOT saying it will not work however like I said I can only see bad things happening long term to your grinder, go forth and enjoy but as for me I will just leave my beans in the hopper and grind per dose without any extra added water thank you! :-)

Just swabbing the inside of the exist shoot with a damp finger just before you grind work and your not putting water through the grinder.
