Hi I bought a second hand mazzer major recently. I was cleaning it today and I removed the fork (for the portafilter) to give it a soak. However I now can't screw it back on, as it feels like whatever the screws screw into on the inside has moved - I.e. there is nothing to screw the screw into.

Welcome to CG.
I have a Super Jolly and a Mini. On both of them, the aluminum portafilter fork is held by bolts on the outside that screws into nuts inside the body.
When you unscrew the bolt, nothing holds on to the nuts inside, so they fall down.
To reinstall the fork, you would have to remove the base of the grinder, and holds the nuts in place inside the grinder body while reinserting and threading the bolts in. There is no other way around it, but its not too difficult.

Like said, the fork is held on by nuts and bolts so you will need to open the grinder to reinstall and even if you want to leave it off, it is not a good idea to have loose nuts floating around inside the grinder with all the electrical components inside.
You will have to locate a, likely star drive screwdriver or bit, they are not all that uncommon and a good hardware store likely will have one, perhaps not a big box store but a good hardware store, sometimes you can find them in auto parts stores too.
You might be able to get it to unscrew with careful use of a phillips screw driver but if it is pretty tight, it might not move without the correct bit.
