For home or shop? For home use, if switching blends, probably don't need two hoppers full. most would single dose with single hopper and just add the beans for each shot. If for cafe, that is different story.
I have a K30 on order (Single, not the Twin model), so I've done my fair share of research on the unit by way of reading user reports here and on H-B.com. I have not had the opportunity to use one hands-on, however. From my research, it's an outstanding doserless, flat burr grinder, for a busy cafe setting. It is built like a tank, is quiet, grinds extremely fast, and produces an excellent quality grind. There have been reports of clumping issues with older models of the K30, but it appears those issues have been addressed by the manufacturer.
I suppose others will chime in as to the merits of flat vs. conical burrs, or doser vs. doserless grinders, however, if a doserless, flat burr grinder meets the needs of your cafe and your baristas, the K30 is among the top choices for high demand cafe use. The twin model would undoubtedly provide an advantage by way of providing the ability to grind 2 different beans at the same time. Of course, so would TWO dosered Mazzer Roburs, which at least in the U.S. can be had for about the same price as ONE K30 Twin. For a busy cafe setting that values a high quality coffee product, my money would be on the Robur. Since mine will be for home use, where counter space and waste are more important factors, I chose the K30.
