Uh, I guess that is as good of an answer as I was going to say!
The other reason is that i host an event at my shop every year and i need to cook and host about 40 people for two days. Is that a reason to have all that stuff.... I guess it is to me. I am able to buy it at auction prices (not ebay!) so i have about 1/5of its value invested into it. I still need to store and maintain it all year though so thee are some other costs involved. I also do some times use it for personal use such as baking a dozen loafs of bread at a time so it does some times get used through the year.

I have a Vario and have been happy with it when it works. If you have the space for a commercial setup and don't mind having what looks like a relic from WWII on your counter, then go commercial, if not, a Vario is a very nice choice (unless you get a lemon like I did).
Yeah, "when it works". I will take the "Relic" because the "Relic" is still working all these years later!!! So far my madness has been a horizontal spread on the counter but the space that the Pharos is now occupying will get a "Relic" Kony, to go verticle, in the near future.
I have threatened to quadruple the size of our kitchen(we have space on an adjacent patio) to include a dedicated coffee bar, as well as an indoor barbque/firepit so my wife has let me have a this section of the kitchen; what a good woman!!
