I know you guys probably get similar questions all of the time but I've done my research and have been talking with the staff at SGC, but still undecided.

Okay, so I've been researching espresso machines/grinders on and off for around 6 years but never pulled the trigger, but I didn't really get serious about researching an espresso machine/grinder until the last few months.  I was a member here years ago but after not logging on for awhile, forgot my login.

After talking alot with some of staff at SCG, I've decided to go with the Rocket Cellini Evoluzione for my espresso machine but haven't decided on a grinder yet.  Originally, I was going to go with either the Mazzer Mini or Macap M4 but after speaking with SCG, talked about the possibility of going with a doserless model, such as the Mazzer Mini E, but it's almost $1000 for the smaller burrs...and I know it's electronic but still..

My question for all you knowledgeable espresso lovers, what grinder would you recommend to go with the Rocket Cellini Evo?  I want my total budget to be around $3000 for the espresso machine and grinder.  I will only be using it to grind espresso since I really don't like regular coffee. I can go with a doser or doserless, I'm okay with either.  I did want a grinder that would be the same quality as Mazzer Mini/Macap M4 or better.  

Any help would be greatly appreciated.  Thanks.

it's not about pairing a grinder with your particular machine like you would pair a wine with dinner. Really you want the best grinder you can afford regardless of your machine *. It's going to be tough to beat the Barataza Vario for the money when your talking about the grind quality. It's more comparable really to the Super Jolly than the mini. The mini is fine machine and odds are good it will out last the barataza. With all that in mind I would go with a Barataza Vario or better. The problem with better is its going to be a big step up in price.

 
You know those people that want to tell you how to raise your kids but have none of their own? That is how i feel when someone with a kitchen appliance tells me how the merits or dis-merits of my machine or how to use it.

A capable grinder is most important. You might want to take a look at the Nuova Simonelli MCI, the Compak K3-touch or the afore mentioned Baratza Vario, all available at SeattleCoffeeGear. Maybe they'll give you a package deal.

Are you open to used commercial or you looking at new only? That makes a difference.
I love your choice in machine (Big ECM/rocket fan here) but you need to buy the best grinder you can still afford. Used gets you more for your money but you have not stated new or used.
The above advice is very good and it would be hard to go wrong with the Vario and for the money there are better grinders, new, than the Mini esp when you say Mini electronic doserless.

Jwoodyu, I understand that you don't pair an espresso machine with a grinder like wine. Since the Rocket Cellini Evoluzione is a good machine, I was just asking for a recommendation would be for a comparable grinder.

Calblacksmith, no i'm not opposed to used commercial equipment at all. Do you have any recommendations to specific grinders and places to purchase. Honestly, i really don't need an electronic grinder at all, I just used the Mazzer mini e as an example.

It's kind of freaky that there is no used Super Jolly or Majors on ebay right now. If you follow best practices and buy it right from someone that has mazzer grinders in their sales history with good feedback the risk is pretty small.
