And now the $64 question, with perfect hindsight, would you have bought it instead of the CMH?

Awwww, only $64???

Short answer:  yes.

Long(er) answer:  I'm not convinced that the Mahlkönig K30 Vario is significantly better than the Cimbali MaxHybrid in the cup (which is, after all, where it counts).  The improvement in moving from the CMH to the K30 is not as dramatic as the switch from the Mini to the CMH was, but -- yes -- I do think there is improvement in the cup between the K30 Vario and the CMH.  AND I think, had I switched directly from the Mini Mazzer to the Mahlkönig, I would have noticed the same "dramatic improvement" I enjoyed in switiching from the Mini to the CMH . . .

My caution (or hesitancy) is that I want to make sure that it's actually "taste" and not "desire" speaking.  After all the machine isn't cheap, even with the deal I got on it, and it's human nature to think/want to believe that your _______ is better than all others simply because it's yours (and because you paid for it!).  And, of course, I still use the CMH in my office, and there has been a noticeable improvement there now that I've replaced the Nuova Simonelli MCF with the CMH . . . which of course has me thinking about possibly replacing the Olympia Cafferex with the La Valentina sitting on my basement to see if that makes an improvement.

So, the bottom line for now -- and remember that I've only run three or four pounds of coffee through through the Mahlkönig so far -- is that a) it is at least as good as the CMH, if not better; b) it's quieter, neater, faster, and easier to use and adjust on the fly; and c) it's a lot more fun!
