I've had luck talking to barristas in NYC at Blue Bottle on certain days and not so much luck on other days. Depends on who is behind the counter. One guy told me that it was a waste to ask him what his brew parameters were since I would never be able to replicate it at home. The other person was more engaging and had some good suggestions.
Some of the guys and gals on the forum have some pretty darn nice (and expensive) equipment. That's when you tell him, after you've finished his espresso, that you replicate that same burned, over-extracted flavor unknowingly at home with your over-roasted and charred Starbucks beans on your steamer :P

When visiting various cafés In Toronto, I've had mostly good experiences chatting with baristas. I usually ask what blend/beans they're using for their espresso. Or, I'll ask them how they like their machine and/or grinder. Sometimes I'll ask about their dosing if it's a blend I also use at home. Most of the time they've been pleasant, and open to chatting. But it's clear that some are more knowledgeable than others.
