Great perspectives, all around.

I admit I haven't the experience yet to build my own wheel of taste descriptors. .. I've never looked at coffee as practice but I suppose like any educational venture, practice is essential.

The problem is I've been drinking so much third wave coffee most of what I drink is bright. Not that it is an undesired thing. I genuinely enjoy it. But I am beginning to see that such brightness is overwhelming and I must be missing out on what subtleties that might be there. I will say it isn't all the same.  There are differences in every cup I drink. I just don't have any words I can describe the flavors with.

I roast my own coffee and lately my roasts have been catering to my wife's preferred drink (drip brews).  She doesn't like this tangy third wave stuff I've been drinking since I became a coffee geek last year with my MyPressi acquisition.  So my roasts have gone much further past 1st crack than I normally would shoot for.  What I've come to realize is that my pour overs (my preferred drip method) have improved greatly, but I think much of that is also attributed to many other things in learning along the way from you fine folks here in this community (such as resting the beans longer).

Anyway I look forward to the day I can start identifying some of these smells and flavors.  It's going to be tough given my personality (I can be near "Aspergers-level" in my technical mindset and if it isn't exactly like blueberries, even subtly, I'll competent miss it)...
