What settings do you use on your grinder? I'm using Red Bird espresso beans and use 5 and D. in order to get 2oz within 25-30 sec. I think I read somewhere on the forum that people were grinding the beans with settings as low as 2.
BTW I put together portafilter pressure gauge and lowered the bar from 12+ to 9.
ahhh...it takes me back a few decades. Though, I find espresso to be more "religion" here in the USA. In Italy, it is just part of everday life for all classes/ages/gender.
My advice: just relax and learn. You will get a lot of good advice right here in CoffeeGeek. You have chosen a good machine with which to start & I can tell you from personal experience that it can last you for several years. One piece of advice is to watch out for scale build-up with any Gaggia machine. Test your water and you will likely need to use (at the least) filterred water.
While I have no expereiance with any Baratza grinder, they seem to be really well regarded and deservedly so.
I prefer porcelain cups and have been using (iItalian made) Nuova Point cups for years; but the glass ones should be fine.
