Coffee, once roasted, has a fairly specific life expectancy. Chemical changes take place in the coffee that can only be easily stopped by deep freezing. Otherwise, even sealing in jars only delays the inevitable. When you open the jar you let oxygen in, and levels as low as 2% (I believe that was the figure on one of the quoted articles in my Friis review) is enough to affect the coffee. If you have a good local coffee roaster and can afford their prices, then getting small amount like 7 to 12 days worth for most coffee, or mail ordering small amounts is the best thing. Otherwise, home roasting is the way to go. Vacuum packing is not a solution either. Can't buy small enough amounts? The solution is to drink more coffee so it doesn't hang around the house too long. ;-)
