Clearly, they documented what they did. I must ask, why do it in the first place? Waiting 20 minutes to drink your shot after it is made? I can even see a case for what happens in the first 5 minutes, that would be a VERY long time to have the shot stand but I can see in a busy coffee shop, you MIGHT go that long from pull to consumption but every shop I have been in that serves quality espresso, the shot is served in less than a minute of being pulled, you then drink the shot(s) and it is gone in less than 2 minutes from the pull, most of the time.
Why worry about trying to keep it going for 20 minutes? I just don't see the point.
