He is clearly new and encouragement is free.

Also, I have found people don't like to be bluntly told the truth.   "No dear, that crema doesn't make your coffee look fat."

Notice the "rats tail" coming out of the portafilter and how smooth the crema looks coming out.. then watch how it dissipates..
