After 2 months of trial and error, I think I've reached a happy place with my Gaggia Classic, my new 2 day old Precisio Grinder and my Red Bird espresso beans.  I've got the grind almost where I want it at 8D (if I'm reading the dial correctly).  I pulled the shots at about 27 seconds and the crema was very nice. I might tweak it a little more for a finer grind.  The taste was very good.  Considered roasting, but will put that off for now.

Glad to hear you are happy.  The new grinder helps a lot in taste, right?

That is also my trio, Classic, Preciso, and Redbird.  I branch out to Redbird Blue Jaguar also.  Happy that it works for you.

No question, the grinder makes a big difference.  Will try Redbird Blue Jaguar soon.  Thanks for advice!

Probably the best place would be from Redbird directly.

David Schomers coffee from Seattle is the best Ive ever had. Taste is a personal thing and subjective, there is no right or wrong here.

Cripes!  I just went to Intelligentsia to see about ordering a bag of Black Cat to try - $21 just for 2 day shipping, on top of $15 for a 12 oz bag

I don't think I'll be trying any of that, ever.
