I am not an expert by any means but I do talk a lot!
I don't know how much difference there would be between metric and "U.S. standard" size copper tubing. It is pretty forgiving when forming though and if you were to be making your own flair fittings etc, I don't think there would be much difference BUT do your own research in that department!
I would tend to think that metric fittings would be more available in Ca than in the U.S. You might want to look to Stephano or one of the other suppliers on the board who support us here.
The fittings and tubing in my NS Ellimatic are all British Standard Parallel Thread on 1/4" copper tubing. Just a quick look at cafeparts.com for the Appia, verifies that that's still what they're using.

Thank you George, taking into account that the fitting is a BSPT, is the tube terminated with a flair fitting or inverted flair? If so, then it is likely that existing fittings could be used and only the tube need be replaced with a proper flair installed on the end of the tube.
