I have a friend in Canada, she is in Toronto and going to her summer home in NB. Any good espresso shops anyone can recommend along the way would be great. Montreal and Quebec to New Brunswick.

It was working in Saint John, NB that forced me to look into the online world of home espresso to begin with. Nothing worth mentioning for espresso in NB as far as I know....I heard there was a place in Fredericton, perhaps, but can't remember the name.
There are at least 4 places in Halifax, NS but that is ~400km from NB (depending on where your friend is in NB)

There are several greats shops in Montreal (I was there this past weekend): Cafe Myriade, Le Couteau/The Knife, Cafe Differance, Pikolo...and the list continues. However, here in Fredericton (and NB more broadly) - not so much. In terms of the 'need for a good shop' for Fredericton, I am just finishing my doctorate and then I plan to tackle this problem!

I've lived around Montreal for some 10 years and as mentioned, there are a couple of good places; but it needs some research.
For some obscur reason, I find that in eastern canada (from Ontario to New Brunswick) is quite "silent" on the espresso buzz. I live in a small town (35,000 or so inhabitants) and there is only one coffee shop that will actually help in discovery of espresso. There's also a Van Houtte - I have nothing against them, some of their blend are supposed to be quite good - but to me it's like a fast food coffee. Otherwise, I have to drive > 5 hours for good espresso. That's why I roast and learn as much as I can myself.
I was wondering, anyone ever found a statistic of espresso shop per "x" population? Like, in a small 35k town, how many espresso shop could there be before there's too many?

Well, the Shediac Sunday Market has a nice little red Oscar paired with a grindnia in the coffee booth and it tasted very good to me. Jadore Mon Cafe Speciality Coffee but they do not seem to have a shop, just the fair booth.

If you are driving thru Campbelton NB, their's La Bruelirie du Quai, haven't try it yet but I will this summer, since my family is from that part of the country
