i just bought an Oscar Simmonelli machine for home, I just sold my coffee shop and my espresso was awesome but this home unit is sooooo bitter. not sure what i'm doing wrong??
i've got fresh whole beans, professional grinder, filtered water...
would not tampering it tight enough be a problem, I was always told not to tamp too tight.

Among other things brewing temperature might be too hot (see above: cooling flush), or the espresso might be overextracted. Maybe it's just not the blend of coffee you like.
How long is your extraction time? How is the flow? What's the colour of the crema (e.g. hazelnut brown or reddish dark-brown)?
