Does anyone actually still use a 14g double. Most shops that I have been to recently and most of the discussion seems to be drifting more towards 18-21g doses. Just curious

I do use 14g double and prefer it that way. There are times when I use 16g too for Latte. It's the same to Gaggia Carezza and also La Peppina for me. Just that I also like single (7g) on La Peppina, no single on Gaggia.

Personally, I don't like to use so much coffee in one shot when I could get almost (almost) similar result with lower dose. It's probably budget issue. But if you really want to enjoy 1.5-2 oz ristrettos, then you definitely have to go to the high dose path.

I still use 7 g for a single shot and 14 g for a doppio, the later I also take for making a Cappucino, Caffè Latte or Latte Macchiato. I'm getting excellent results on my Poccino Opus One and hardly see a reason to updose. 21 g I'd consider a tripple espresso.

But that's just my personal way of brewing.

I use 18 g and pull two full oz for a double shot. My machine is volumetric dosing and I know, for sure, the shot will not blond with 18g for a double shot, unless I mess up the shot prep, which would make any shot be bad not just in a volumetric machine.

theory says that using 18 grams you should grind coarser then if you were using 14 grams = your extraction last longer before blonding, but your brew quality does not improve.....still if you want it bigger there is no way around...

Pietro, I really don't understand what you are trying to say.

14g, 25 seconds at about 9 bar and 195 to 205 for a two oz (double shot). I add a little more coffee to avoid blonding early while maintaining the 25 to 30 second pull.

I never said it was a restricted shot(s)

Wayne, to go from 14 gram to 18 you definetly need a different basket, but point is that thickness of puck will increase causing an increase in brew pressure = to extract at same pressure you need to grind slightly coarser : with 18 gram you avoid early blonding BUT it is not the same espresso..... (only for argument sake)

I use 14 g doses for doubles, but it goes with the territory when using 45 mm La Peppina baskets and 51 mm Gaggia Factory baskets.

I've dosed up to 18.5 g in the La Peppina as an experiment, so it can be done as long as you help the spring, just not my preference.

Ive been pulling at 16 grams with no issues to speak of. However theoretically if all is well a 14g shot shouldn't blonde. I pull at 16g for a 50ml ristretto, or a 100/110ml pull for a double espresso (typically just in latte's). The 21g triple ristretto is just stupid if you ask me.

If you're having trouble at 14g, up the dose to 16/18g and work out your technique a bit, then adjust yourself accordingly as you move back to 14g.

It depends on many factors such as the basket, protrusion of the shower screen, and even the roast sometimes. I have been using around 15.5 to 15.7 grams. The same does that works on an E-61 is not necessarily going to work on a Silvia. The barista has to adapt the dose to the equipment, coffee, and their own taste preference. And if you are using a scale that has a resolution of while grams, it is fairly pointless to even try to get an accurate dose by weight and you are better off to dose by volume.
