I normally break open a new bag of beans at Day 4 post roast. I just received an unexpected bag of beans that will be 2 days post roast tomorrow. Will tomorrow at Day 2 post roast be too soon to grind? Thanks!!!!!!!!!!!!!!!!!!!!!!!! Just don't know if it will be way too bright that soon.

There's no general answer to that question, because depending on the variety of beans, they should usually rest for five to ten days after roasting, before they reach their aromatic peak, at least for brewing espresso. In the end it's a matter of trial and error. It's your taste buds that decide, when they are best.
