I agree, Helen, I'd be very surprised if one of us were to visit you and find you really do "suck".
On that note, however, today, I found out that it is certainly possible to make Red Bird suck! After having a discussion with a local barista several; weeks ago, I happened to be able to re-visit the place, and as promised, I brought in a 16oz jar of "fresh" Red Bird. She dropped it in their Mazzer robur, pulled a double on their Faema E61 and then we tasted it. Wow, it was theeee mossst horrrrible shot of Red Bird I've ever had. We both agreed it was comparable to something you might get at *$$. It was totally bitter and over-extracted! At the same time, it had a beautiful looking crema on it in the cup. As you can imagine, I encouraged her to dial it in so she can enjoy the "snickers bar" flavors we all love. She didn't have time while I was there, but as I told her, I don't need to wait around for that because I already have it dialed in at home.
. Always remember the most important thing is what ends up in your cup!

I will not suck next week, my class is Saturday! And so far no sink shots on red bird. It grinds in about the same range on the vario that all other beans have done so there was no real dial in for me. It makes pretty crema and tastes good to me. All my beans give me about the same time at 2 on the numbers and the low middle of the range on the letters. I start about 2/3 of the way down and go up to almost the top of the letters right before I get the next quarter pound out of the freezer. (2-3 days) Then I have to go 2/3 of the way down again.
Buying advice: GRINDER GRINDER GRINDER. Don't cheap out on the grinder.

+1!Right away I was constantly getting a "high note", but now that I'm at a week out, I'm making the smoothest, least bitter espressos to ever come out of my machine. My wife gives the capps and lattes a thumbs up, as well.
That "high note" might be the fruit finish that makes the Blue Jag interesting. I usually break open the bag on day 4 & get chocolate up front with a nice fruit finish. The fruit fades as the blend ages. Just received a lb today roasted 2 days ago. Gotta love Priority Mail!

I just finished off a pound of his Guatemala Antigua and it was very tasty, will have to order more with my next order of Red Bird. I tried their Blue Jaguar and it was good but I like their Red Bird better.
I just got my latest five lb shipment of Redbird and I am really upset. The beans? Nah, they're great as usual, but no candies in the box! Come on Jeff, those candies are the only reason I purchase your coffee! Well, not really!
On a serious note, the beans were roasted and shipped on Tuesday and I got them today in San Bruno,Ca . Two days, outstanding!!!!
