When I bought redbird espresso, I used a food saver to vacuum seal about a pints worth. Then I would take two pints and put it in another bag and vacuum seal that. I notice that over time in my freezer the beans are still off gassing. I took one bag out today and the whole bag was puffed up.
Is this normal? or should I be concerned with this?
The freezer doesn't stop aging it slows it. If you have a deep freezer then it really slows it down. If you have one of the frost free units then it cycles on and off to keep the frost off and that is not as good for long term storage. So, yes beans still off gas some in the freezer, some more than others.

Well, I ordered my Redbird on Sunday, got an email late Monday that he would roast and ship on Tuesday. Checked the progress on my package this (Thursday) morning and it looks like it will come today. The tracking shows it at my post office at 7:30. So, since my post office is so small, I fully expect it to be in the box by 10:30 (in 2 hours) That is some amazing service. The US post is getting much better! Tuesday-Thursday from Montana to Oregon.

I have enjoyed Redbird Espresso, Espresso Decaf and Blue Jaguar. I have frozen some on the day of arrival and some the next day just because of convenience/schedule. I cannot tell any difference. They still gas off some in the freezer, so that a small gas escape occurs when I unseal the jar, seemingly independent of which day I froze.
I ordered two more pounds Monday evening, it was roasted yesterday and is on it's way. Went I lasted checked it was in Billings, MT. So we'll see how fast/good the USPS is in getting it to me here in south eastern North Carolina. So far their track record is 3 - 4 days. You people on the west coast are lucky, ya'll are closer to Redbird then us in the south. May try some of B & B's Dancing Goat they've got a roaster down in or near Atlanta.
I will tell you what I think about redbird vs goat in a day or so. I will have had both by then. My impression was goat was good but the flavors were not as complex as the other espressos I have been buying.
