these work pretty well in the freezer for me. And as this is an admirably evidenced based thread the evidence is that when I pop the top I get a nice, fresh roasted coffee smell every time. The espressed coffee behaves just fine, good flavor and body. I have not held coffee beyond about two weeks so I can't say how long they will work.

I dunno if SCG has good or bad street cred around here, but they did an unscientific test about freezing (Click here).
They found that, at least with Velton's, what worked best was keeping it in the factory bag but with a piece of scotch tape over the valve. I can't figure out why that worked better than the bag without tape over the valve, or than the Freshsaver bags. The coffee in the vac bag had offgassed, but wouldn't the valve being covered do the same?

The idea is that freezing stops the outgassing, and taping the valve shut prevents air from entering the bag in the freezer. The valve doesn't work right when it's frozen, so it's best to disable it until you defrost. I've found that beans frozen in Mason jars with new lids that survive freezing well will give off a pop after they're defrosted and opened, and beans that come out skanky won't.
