Pretty darn close but not quite close enough to say its never 7 days. I have not made notes on it so take that with a grain of salt. It also seems that the Blue Jag takes about a day longer to gas but now that result is really anecdotal. The wife and I live about 15 miles north of the Indiana / Michigan border some I am guessing the shipping times and conditions are about the same coming from Jeff.

When they come out of the freezer I let them come to room temp before cracking the bag so the bag collects the condensation not the beans. Sorry for the double post but i got a follow up in email and did not want to goof someone up because i left that bit out.

Yes, when Jeff roasts on a Monday, for example, I always get it Wednesday.  Never fails.  I previously always loaded up my qt jars and freeze it right away, but after what happened last time, I will let them degass a few days first.  I'm almost afraid to open the rest of the jars that are in the freezer.  May wear wear safety glasses and a hardhat for the next jar opening.

I have some lids with the one way valve in them that fit mason jars around here some place from my home roasting days. They work pretty slick if your using jars but of course you would have to tape over them before freezing them. Living in cold country I worry about getting my beans in winter. I know for a fact when beans are frozen they tank more quickly than never frozen so if they beans sit in a truck or mail box in the winter....

Hi BigStormGirl:  Throw a dish towel over the lid of the jar before you open it. I reach under the towel and twist off the lid.  Sometimes it pops then and sometimes not until I dislodge the seal.  Haven't had an "eruption" since I started doing this.

After reading so much about Redbird, I ordered a 5lb. batch. It was roasted on Monday and made it to NJ on Wed. (!). Most of it then went into Mason jars and the freezer. I gave one lb. to a friend. I'm keeping about 10 days worth stored on my counter.

Let me say that even in these early days, I'm pulling some superb shots with Redbird! It seems to make an incredibly smooth and delicious straight shot with a kind of mocha, caramel, nutty flavor and pleasing amount of acidity. I'm not sure I'd call it a "Snickers bar" flavor myself, but I can see how it might become that. I like it so much that I've been drinking an extra shot in the morning and at night (can't resist!).

Another plug for Jeff at Redbird coffee. I ordered some Redbird espresso. Was shipped blue jaguar on accident. Emailed Jeff a picture of the package and he promptly replied and is shipping me the correct item. I was floored by how responsive and helpful he was. No questions no pain, just excellent customer service.

I am very happy with Redbird coffee and Jeff.

Good job Jeff.

Jeff and his coffees are indeed righteous. The flavor profiles, attention to detail, customer service, etc. is 2nd to none.
