I'm going thru roughly 5lbs a month. As soon as I get the shipment in, I separate it into quart mason jars. I usually get about 10oz in each jar. I vacuum seal and set in the deep freezer. I don't have any gassing issues while in the deep freeze. When I take a jar out I place it in the cabinet. Day 2 and 3 there is a bit of out gassing, but nothing major. Just a "pop" when opening the jar.

I had been buying two single pound bags of CBX Dark Espresso (from Coffee Emergency) and double-bagging the second bag and freezing.  I go through about a pound per month and found that the second pound did not have quite the flavor of the first pound.  And recently I found myself going into a third frozen pound and there was definitely a significant drop off in flavor.  To save money on shipping, I could go with the two pound purchase, beyond that my enjoyment diminished too far.

Just wondering ... are you the only person working on that 5 pounds? ;)

I just got my first order of redbird in, roasted on Friday and it came here on Monday to Boston.

I didn't get a zip lock bag with a one way valve, he put it in a regular huge zip lock bag. Not sure if Jeff ran out or this is what he uses now.

When I smelt the outside of the bag, it smells really nutty. Is this what everyone experienced just from the whole bean?

I have received several 5 lb bags from Jeff this year, and it has always come in a large zip lock.  

Just got quite a shock when I opened my 1 quart mason jar that I pulled out of my freezer.  When I opened the lid, it was like a volcano erupting!  About half a cup of beans shot out of the jar all over my kitchen!  Scared the **** out of me.  I normally load my jars up when I get my order (get my order 2 days after roast) but next time I may let it sit a couple of days to degass before freezing.  Yikes.

I love the Red Bird espresso (regular and decaf), but have also been enjoying their Blue Jaguar blend.  Hmmm,... good!

I'm not sure how the Redbird Espresso is roasted, but I have never had an espresso blend make it two weeks without starting to crap out. Very impressive!

When I first got my 5 pound bag, there was a burnt charcoal smell or burnt popcorn smell. I just assumed that how it smells cause the beans did not look burnt.

After a few days it didn't have that smell anymore however today when I got home I had one of my shot glasses on my desk that I didn't wash this morning from pulling a shot. It had dried up espresso in it and it had that burnt smell.

Is this how it is suppose to be?

It's a little hard to translate what your smelling to the written word. That said I can't imagine that Redbird is burned. Jeff roasts that to a full city+ so even if he missed his intended sweet spot there would be a large margin before the beans burned. That and if he did miss I don't think he would ship the product.

Jeff stopped shipping in the valve bags early this year. I kinda of prefer the bags with no valve so i ca burp them manually. When the coffee arrives I lay the 5 lbs on the counter then smooth it nice and flat burping all the air of the bag that I can. Over the next few days the bag will puff up a little less each day. I turn and burp the bag every night till the bag stops puffing viola the beans are degassed. They get split into little zip locked bags which are burped then all those are placed back into the albs bag which is burped and into the deep freeze they go.

 
You know those people that want to tell you how to raise your kids but have none of their own? That is how i feel when someone with a kitchen appliance tells me how the merits or dis-merits of my machine or how to use it.
