(edited!) When I receive mine, it's a 2 days old.  I let it age a day and then freeze it in pint mason jars.  When I pull it out of the freezer it usually sits for a day, so 4 days old.

Slightly sacrilege: non-spoilered:

I found a virtually new Keurig B66 at the local Goodwill and $13 later I was home playing.  No cup holder (being shipped) so a bit of a rigged jury in the meantime.  I find it to be more than adequate for when I want a quick cuppa and don't want to wait 30+ min for Anita to warm up.  Been using retail k-cups but wondered about DIY.  Keurig brews under pressure, so make sure it's sealed!!!

So emptied out a used Tully's Kona(this particular filter is deeper than others), let it dry, cranked my Macap up about 20 full turns and ground a bit of the REDBIRD (takes less than half of a double espresso), and covered it with a double layer of alum foil, crimped, and slid my jury ring around it.  Lock and load and about half a minute later a VERY flavorful cuppa.(8oz)  This idea is a definite keeper, though I'll get the poly-carbonate caps on fleabay.

Redbird rocks!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Well I've lost count the number of 5 lb. orders (four, five?) I have gone through, and still this is a keeper.  Got my order as many do, 2 days post roast  (with chocolates, tyty Jeff!)
and I got a surprise today.  This is only third day post roast, thought I would go for a ristretto doppio.  I typically grind very fine when it's this fresh, and now I went even finer.  
16 grams, 45 second, 1.5 oz shot, and surfed my Evolution's brew temp HOT.  
The results were a decadently thick, rich flow from the getgo, it even LOOKED like melted caramel pouring, with ribbons of chocolate!
Earlier tries with the beans this fresh was not exactly prime.
The taste was bittersweet nutty chocolate, dark cherry with a touch of the caramel (the caramel always comes in after about 6 days post roast, I expected that)
So I now know to hold to ristretto shots until day 6 post roast, with a hot brew temp, then go coarser to normale and lower the temp from then on.

Haha what a coincidence!

I just woke up and grabbed the fedex package of my 5lbs of Redbird off my porch 5 seconds ago.  My 3rd order!

And picked up some mason jars yesterday.

About to clean my Vivaldi and grinder.  I seem to have fallen into a routine of of cleaning before every batch.

Another happy customer here!

Got mine last week and just prepping to freeze in 1 lb increments.

I'm very green when it comes to making espresso on my own, but this coffee plus my little hand grinder blows away my favorite espresso from stores and is way better than what i was using (illy and some other preground).

Thanks red bird!!

(P.S. the chocolate is delicious as well) :D
