5 lbs arrived Monday evening and I pulled two shots on my pavoni this morning.  Both were very good, though not great. Then at work this afternoon I pulled a shot on the Caravel and it was incredible -- a lovely ristretto:  thick, rich, Mexican chocolate spicy with a loooong finish.  Really a wonderful shot.  I can consistently pull better shots on the Caravel than the Pavoni, so I'd attribute the difference to the machine.  I split the 5lbs with a friend and I'll try a shot or two at his place with his Gaggia and let you know how that goes.

Wow, next order will have to be a #5 bag. Excellent shots & wonderful latte's I'm getting that spicy chocolate flavor as well with about 16G, 24 Secs for 1.5 oz.

I cracked open my lb. of Daterra, roasted and shipped Mon. , arrived Wed.  At two days post roast, this stuff is a gushing gas bomb.  Channeling, blonding, tons of crema that all but disappeared a few seconds after the pull.  I expected a sink shot, but instead, got brave and tasted.
The chocolate is there, but not exactly spicy, or strong for that matter.  For as bad as it looked, it tasted good, and still held up in milk.  
I need a much finer grind and a couple days degassing.  And a mop.  I'll see what Friday brings.

To my taste, most espresso takes at least 6 days post-roast before it is ready for use.

Ahh, but for me to sit and watch new coffee degas for six days?  ...not gonna happen.  Four days post roast, grinder dialed in --
--side note..I had to replace the stepless mod on my Hario, it wore out and was slipping--after that, dialing in was easy.
to almost a Ristretto double, and it's really starting to chime in.  Chocolate abound, spicy aftertaste (not sure if I like that or not, but it's different), which carries through in the crema quite strongly.  Cuts through milk like it's not there.  Very bold taste in a latte or capp.  That I know I like!

Hoop hoop for the Caravel!

I, too, am regularly stunned at the shots I get on this thing. It's ridiculous. I used commercial La Marzoccos day in and day out and, I'm still amazed at what this diminutive thing in the corner of my kitchen counter can do.

But yeah, I'll try a lb of this stuff next Red Bird order!

Well, I mixed Red Bird Espresso Blend and Brazil Daterra in the Vario this morning and made a very tasty cappuccino...the best of two beans.

I never see anything on this forum about blending different roasted beans in the grinder to make unique shots.  Is there some reason why this is not a good idea??  I understand there might be different temperature recommendations, but I set the Duetto at 200 degrees and figure I'm somewhere near an 'average.'

His family owns Fazenda Cachoeiro.

I was surprised at how deep into the roast he could take his Brazils (specific request from a customer) and have it not turn to ash.
