I have bought coffee from Sivetz Coffee in Corvallis Oregon. They put their coffee in two gallon glass jar's with metel screw top lids (no air tight seal) The third time I bought coffee from them they had just brought the jars out from the freezer or frig. The jars had condensation all over them.
They freeze and re-freeze daily. This last pound I bought had a distinct taste of mold. After that taste of mold I never went back and never will.

I do know that some of the newer, more advanced green coffee storage and transport systems use freezing of vacuum-sealed bags to maintain freshness for more than a year, but the more fragile roasted bean is potentially a different story.  Does anyone have any real-world data to give more insight?

My real world data is that I've been freezing all the roasted coffee that I buy for the past 14 months with none of the issues that folks dream up. I vacuum bag most of my coffee before freezing but I've also been using some 1/2 pint jars recently. The only condensation is strictly on the outside of the container when you pull it out of the freezer & this is primarily on the jars. I do not put the container back in the freezer once removed & I've never had mold or taste issues. I have pulled excellent shots from beans frozen for 6-8 weeks or more.

Thanks for all the responses....I vacusealed the sealed bags and put in the deep freezer (-20F), results were excellent, very fresh when I opened a bag.  Paradise also allows you to mix and match 12 oz bags and continue to get the discount.  This I will do next time, total cost was 4.5 lbs (6-12 oz bags) of Espresso Classico for $60 delivered...not bad
