Hi.
Hoping not to arouse some negative responses from Starbucks dislikers, but I did like their Arabian Mocha Java blend. Can anyone share the blends and the ratios involved?

I can only guess any of the Yemen Mokhas (sanani, mattari, etc) blended with some Java. I should like that, too, if fresh (but how could Starbucks manage that?), coz I really like the Yemens. Sometimes I even blend it with some good beans from Benguet or Sagada.

As a homeroaster, it is one of my favorite blends. I usually start with a 65/35 ratio, Sumatran or Java to any Yemen that I have. I tweak it, depending on the beans. They all dance very well together.

My understanding of the classic Mocha Java blend is 50% Yemeni beans and 50% Java. Java estate is available on a regualr basis and the Yemeni that is regarded as best will change from year to year. That's a relatively expensive blend from a wholesalers standpoint if they're trying to hit a certain target for retail price. In many cases the "Mocha java" blend is simply made up of one Ethiopian variety and one Indonesian with the specific bean types and the ratio determined by taste and price (not necessarily in that order).
