Subject: Kid-0 Too Bright
 

I have been using Kid-0  roasted 4/14. Rocky Grinder & Gaggia Coffee.
I'm making triple shots. I'm finding my drink, tasting too acidic or too "bright."
I'm grinding slightly finer than for Black Cat. The crema is better on the finer grind but the taste not improved.
Any suggestions?

Kid O is not a particularly bright blend, so I think you are pulling too cool.  My suggestion is look up "reverse temperature surfing" on this website,. Using that technique, pull your shots of Kid O a little hotter than you have been.

Let Carlo Gaggia warm up longer this morning. No way I can temp surf, reverse or otherwise on a work-day morning. Kid was still bright ( I interpret that as more acidic and at risk of being sour) but not as bad as Sunday. Will continue to earnestly work my way through the pound.

Triple shots as in 3oz total espresso volume?
Or, as in a triple ristretto with greater than 20 grams giving less than 2 ounces of espresso?

2.5 to 3 OZ.  Using about 19 -21 grams. Triple basket / naked portafilter.
I'm still working on my ristretto technique & have a long way to go.

A friend brought some over that was about 2 weeks old, nevertheless, we were pulling it at 203F. It was the first time trying this blend for me, but it did seem to pull better at hotter temperatures than the Black Cat.

This is very hard to diagnose. Sounds like you'll be through that pound soon, too.

Silvia has treated me better than Gaggia. I don't know why. Is it possible to post a photo of one of these espressos, Javanj? Definitely try decreasing the dose by a couple grams. Since you're using a naked portafilter, be sure to mix the liquid and crema.

Did you ever come to a satisfactory solution?  I actually preferred Kid O at temps several degrees cooler than other blends - 198ish if a non-scaced GS/3 can be trusted.  Of course, YMMV - I dislike bitterness and probably tend to run my shots cooler than some to avoid it.
